Cabanossi is traditional snack sausage with a coarse texture, made from beef, pork, salt, paprika, pepper and garlic. It is cured, smoked, cooked in water and dried. Due to drying process, the surface of the sausage is wrinkled and the colour dark red-brown, typical of cured, smoked and dried meats.

It has a strong and spicy flavour.
